The sparkling 2018 Crémant du Jura Indigène is a blend of 50% Chardonnay, 40% Pinot Noir and 5% each Poulsard and Trousseau fermented in equal parts in tank and wood. The second fermentation in bottle was produced adding unfermented vin de paille (sweet) and vin de paille in fermentation (yeasts). This wine is sold without any added dosage and very low sulfur. It has a copper-like color, like a blanc de noirs, and a very expressive nose, very floral (orange blossom), with some vin de paille echoes. It’s a serious sparkling wine, elegant with finesse and nuance, nicely balanced and with very small bubbles. This is simply fantastic.
