The sparkling 2011 Porcellanic Espurnejant Brut Natural is completely different. Pale-colored and with imperceptible bubbles to the eye, the nose is a symphony of yeasts and err… ceramic (?) aromas, somehow mineral, with notes of white fruit and flowers, organic and earthy. The palate is lightly spritzy, unusual and intense. It’s produced with the ancestral method to avoid a drop in acidity usually associated with the Champenoise method. It’s bottled with a little bit of sugar and there is a little bit of fermentation in the bottle. A sparkling full of character, but not for all palates.
