Fermented with indigenous yeasts and aged in 400-litre French oak barrels. Second fermentation in bottle with a minimum ageing of 54 months. Disgorging by hand and bottled unclarified, unfiltered, with no added sulphites and no final dosage.
Description
Parmantier Le Caqueray 1er Cru Extra Brut is a white wine made exclusively from Chardonnay grapes by the Parmantier Frère & Soeur winery in France.
The vineyards from which the grapes from which this white wine is made were planted in 1988 in the Lieudit parcel in Chamery, a Premier Cru village in the Montagne de Reims.
The vineyards were cultivated on clay-loam soils with a favourable south and southeast exposure.
Winemaking
The grapes are harvested by hand and a precise selection of the grapes is followed. It has been vinified with a gentle maceration of the grapes for a few weeks in open barrels of 400 litres.
10% of the must is pressed from the grapes extracted from the barrels. The final dosage is kept within the guidelines of an Extra brut and the disgorgement is carried out by hand.
Subsequently, the wine is aged on fine lees for 12 months in the same closed barrels and bottled unfiltered, unclarified and with no added sulphur dioxide.

Parmantier Le Caqueray 1er Cru Extra Brut is a white wine with a complexity of fruity and mineral aromas. The palate is powerful, fruity and mineral. It has an integrated acidity and is a real delight!
