Disgorged in November 2019 with 1.5 grams per liter dosage, the latest rendition of Sébastien Mouzon’s NV Extra-Brut L’ascendant Solera is based on the 2015 vintage and complemented by 50% reserve wines derived from the domaine’s eponymous solera, established in 2010. Offering up aromas of citrus oil, white flowers, fresh hazel and macadamia nuts and oyster shells, it’s medium to full-bodied, seamless and complete, with racy acids and a tensile, incisive profile despite the ripe base vintage. This is still quite tightly wound and will blossom with a bit of time on cork.
