The 2019 La Resistencia Activa Contra El Marqués is their third pét-nat, or ancestral sparkling white. It fermented in old tinajas (amphorae) for 18 days, from grapes that were slightly riper. It has a funkier nose than the other sparkling wines and an earthy touch with hints of quince. All bottles are disgorged prior to being put in the market, because Gozalo doesn’t want the lees in the bottle. The palate is vibrant, and the flavors are more focused than the nose points at (I tasted from a bottle that was disgorged a la volé). 5,000 bottles produced.
