Rounding up the single cask series is the NV Single Cask Pedro Ximénez, selected from one of six casks, with sweet and roasted aromas and flavors and acidity that partly compensates for the whopping 442 grams of residual sugar. It’s around 20 years of age and will eventually feed their VORS. Even if it might sound like sacrilege, pour it over vanilla ice cream. Yum! 480 half bottles were filled in march 2017.
