The sweet red Monastrell 2014 Dolç de Mendoza could be the initial step toward a Fondillón (which will be released in the future), a non-fortified red with some 80 grams of residual sugar and 15% alcohol from very ripe grapes that fermented with indigenous yeasts. It matured in American oak barrels for 36 months. There are notes of tobacco and spices, carob beans and a touch of esparto grass, and in a way it feels less candied and ripe than in previous years. The palate is a little difficult, as the wine has lots of tannins that kind of hide the sweetness. Pepe Mendoza tells me he has it with Stilton cheese. I shall experiment… 2,000 half-liter bottles were filled in February 2019.
