Description
Cueva Vi Viu Ancestral is a natural red wine made from Syrah, Grenache and Monastrell grapes by Bodegas Cueva in Spain.
The grapes used to produce Cueva Vi Viu Ancestral come from vineyards grown on clay-limestone soils located at an altitude of 650-700 metres above sea level.
Ancestral wine is a type of sparkling wine made in a natural and artisanal way by the ancestral method with a single fermentation that starts in a tank or in barrels, but finishes in the bottle and has a lighter bubble.
Winemaking
The grapes are harvested by hand. The product undergoes a total destemming and bleeding. Alcoholic fermentation begins in stainless steel tanks with indigenous yeasts and the fermentation is completed in the bottle.
Finally, the wine is aged for a minimum of 4 months on its fine lees. No filtration, stabilisation or clarification is carried out.
Taste
Cueva Vi Viu Ancestral is an aromatic wine with a fine but persistent bubble, capable of making us feel unique sensations. It is surprising for its light tannins, fresh and balanced, very structured and round.
