Description
Cueva Joy Ancestral is an ancestral wine made from Tardana and Macabeo grapes by the Bodegas Cueva winery in Spain.
The grapes used to make this wine come from vineyards grown on clay-limestone soils located at an altitude of 650-700 metres above sea level.
The ancestral style of wine is sparkling and made in a natural and artisanal way by the ancestral method with a single fermentation that starts in a tank or in barrels, but finishes in the bottle and has a lighter bubble.
Winemaking
The grapes are harvested by hand. Alcoholic fermentation is carried out with indigenous yeasts together with Bobal lees in stainless steel tanks.
Finally, the wine is aged for a minimum of 4 months on its fine lees in the bottle before disgorging. No filtration, stabilisation or clarification is carried out.
Taste
Cueva Joy Ancestral is an aromatic wine with fine bubbles that persist and, on the palate, is surprising for its light tannins. It is fresh and balanced, very structured and rounded.
