Description
Cueva Brutal Ancestral is a sparkling white wine made exclusively from Moscatel de Alejandría grapes by Bodegas Cueva in Spain.
The grapes used to produce this wine come from vineyards grown on clay-limestone soils located at an altitude of 650-700 metres above sea level.
This ancestral style of sparkling wine is made in a natural and artisanal way with a single fermentation that starts in a tank or in barrels, but finishes in the bottle and has a lighter bubble.
Winemaking
The grapes are harvested by hand and pressed directly. The maceration of the skins takes 20 days. Alcoholic fermentation with indigenous yeasts is carried out in stainless steel tanks and the final fermentation takes place in the bottle.
The wine is aged for a minimum of 4 months on its fine lees. No filtration, stabilisation or clarification is carried out.
Taste
Cueva Brutal Ancestral is an aromatic wine with small bubbles that persist and, as it passes through the mouth, it is surprising for its light tannins. It is fresh and balanced, very structured and rounded.
