Description
Clos Lentiscus Xarel.lo Xpressió is a sparkling wine made from Xarel-lo and Xarel-lo Rojo grapes by the Clos Lentiscus winery in the Penedès DO (Catalonia).
The grape varieties come from vines grown under the principles of biodynamic agriculture and planted on calcareous soil, granitic sand typical of this most Mediterranean Catalan region.
Winemaking
To produce this sparkling wine, the grapes were harvested by hand. Once in the cellar, alcoholic fermentation was carried out separately for each variety.
The Xarel-lo varietal ferments for 7 months with indigenous yeasts in oak barrels, while the Xarel-lo Rojo ferments in Roman amphorae.
Then, before the second fermentation, honey is added and the fermentation process starts again with its own yeasts. Once in the bottle, this sparkling wine will rest with the wine in a horizontal position or in the rhyme phase for 60 months before it is ready for disgorgement.
Taste
Clos Lentiscus Xarel.lo Xpressió is a complex and elegant sparkling wine, with a very varietal character to which its time in bottle gives it amplitude. In the mouth it is fresher than expected, enveloping and with a fruity sensation, creamy on the palate and a correct, balanced acidity.
It has a somewhat unctuous, persistent finish and a subtle mineral sensation. It is a well-structured sparkling wine.
