Fermented with indigenous yeasts in stainless steel tanks. Second fermentation in bottle with a minimum ageing of 24 months. Bottled unfined, unfiltered, with no added sulphites and no final dosage.
Description
Chavost Eurêka Brut Nature is a champagne made from Pinot Noir, Chardonnay, and Meunier by the Chavost winery in France.
The grapes come entirely from a plot called «Les Hurées» in the town of Chavot, from vineyards cultivated with sustainable agriculture techniques and located on a clay and limestone soil.
Winemaking
Harvesting is done by hand. Vinification takes place entirely in temperature-controlled stainless steel tanks.
Spontaneous alcoholic fermentation is at 17 °C with indigenous yeasts. Malolactic fermentation is also spontaneous at 20 °C with indigenous bacteria.
The wine is then racked into the bottle and aged for approximately 20 months before disgorging without a gram of sugar or a single dose of sulphur. Once ready, it is not clarified before bottling, nor is it acidified or deacidified.
Taste
Chavost Eurêka Brut Nature is a champagne with fruity and floral aromas. On the palate it is refreshing and scorchingly dry with excellent acidity, good balance, structure and drive – a wine to enjoy unhurriedly in a few years’ time!
