Description
Cassot des Mailloles Médée is a young rosé wine made from the Syrah grape variety and the Marsanne contribution in the Languedoc-Roussillon region of France.
The grapes come from a plot with a soil rich in granitic sandstone at an altitude between 550 and 600 metres above sea level.
This vineyard has been cultivated with certified organic farming techniques with permanent vegetation cover, work under the row with horse and with very moderate use of volcanic sulphur, copper and vegetal preparations.
Winemaking
The grapes are harvested by hand. Vinification is carried out in the winery after direct pressing of the grapes. The maceration is short, the grapes are fermented very slowly with indigenous yeasts and without temperature control in stainless steel tanks.
The wine is aged for a few months in tanks. Unless otherwise indicated, the resulting wine is bottled without filtering, fining or sulphiting.

Cassot des Mailloles Médée is a wine with fruity and floral aromas in continuous interaction with spicy notes. On the palate it has an excellent structure and fruity and floral richness in perfect balance, as well as a pleasant drinkability and flavour.
