The Saves NV Extra Brut Disg. 11/2012 – an all-Bouzy (hence, “grand cru”) affair featuring 25% Chardonnay – spent nearly five years on its bottle lees (80% of it being from vintage 2007), yet still emerged lemony-bright and sharp as a tack. Piquant walnut and citrus pip along with musky bite of rose radish all further invigoration in a sustained finish, and there is a polished texture here that can only be achieved through long-aging. Hints of honeysuckle and lily-of-the-valley add allure to what – while not the most complex examples of its genre – is bracingly ultra-dry, long-finishing, and harmoniously high-acid Champagne that will likely prove fascinatingly versatile at table over at least the next couple of years.
