There is an old Pedro Ximénez that does not have a specific brand name, but is from the same range as the La Casilla and El Cerro, bottled in half-liter bottles and sold at the same price; it is simply labeled NV Pedro Ximénez. There are intense notes of carob beans (algarroba), dry figs, nuts, dates and dark chocolate with hints of spices and espresso coffee. The origin was a half-barrel they bought from Domecq that they were mixing with other wines and is now around 20 years of average age. The palate does not really show the high concentration of sugar it has, some 380 grams, but it has good acidity and keeps balance. There are only four 250-liter barrels of this wine, so they only bottle some 100 to 150 half-liter bottles of this.
