Winemaking
Fermented with indigenous yeasts in neutral French oak barrels. Second fermentation in bottle with a minimum ageing period of 54 months before disgorgement.
Description
Bérêche Cramant Grand Cru is a sublime expression of the terroir of the Côte des Blancs, specifically Cramant Grand Cru. This wine comes from an area of 0.40 ha, with vineyards that are over 45 years old. Located at altitudes of 190m for the Bateau plot and 170m for Chemin de Chalons, these vineyards benefit from an exceptional terroir. The soil, composed of clays, lime and chalk which gives a distinctive character to the wine.
Winemaking
The blend of this wine is 100% Chardonnay. Its elaboration is meticulous, starting with a slow fermentation in oak barrels, followed by ageing on lees. Foaming is carried out with natural cork, and the wine is kept in the cellar for 54 months before disgorging with a final dosage of 3 g/L (Extra Brut).
Taste
The appearance of this wine is intriguing, with a light grey colour with green highlights that captures the attention. Its bouquet is broad but delicate, evoking notes of hawthorn on a background of slightly damp chalk. On the palate, it is unctuous and reveals hints of iodine. Its purity is unequalled, reflecting the great terroirs of the Côte des Blancs. The finish is smooth and chalky, giving way to the emotion that only a Cramant can offer.
