Winemaking
This champagne is composed of 80% Pinot Noir and 20% Chardonnay. The grapes are grown in vineyards that have not been chemically treated since 1969. Vinification begins with a traditional pressing, followed by a spontaneous decanting of a few hours. Alcoholic fermentation is carried out withindigenous yeasts, followed by malolactic fermentation. Tirage takes place between spring and summer after the harvest. Ageing on the lees lasts at least 72 months, adding complexity and depth to the champagne.

Champagne André Beaufort Ambonnay Grand Cru has a pale yellow colour with green highlights. On the nose, it offers notes of yellow fruits and bread crust, emerging from a rich and mineral aromatic profile. On the palate, it is intense, rich and creamy, with great elegance and minerality culminating in a saline finish.
